Procedure:
Diutan gum was dispersed in glycerine. Water was slowly added whilst stirring until a homogenous gel was formed. In a separate beaker, the ingredients for phase B were combined. Both phases were heated to 70°C and phase B was added to phase A whilst stirring at high-speed using an overhead stirrer. The mixture was homogenised for 2 minutes and stirred to cool. Phase C was added once the temperature was below 40°C.

Appearance: Off-white cream
pH at 20°C: 5.5–6.0
Viscosity: 4500-5000 cP
Stability: Passed 3 months at room temperature and 1 month at 50°C
